The global food value chain – Systemic strategies for food authentication (Wednesday, November 08, 2017)

Worldwide, food fraud most commonly affects goods such as olive oil, fish and organic foods, as well as commodities such as spices, tea, cocoa, coffee or nuts. Globally, revenue from counterfeit or adulterated raw materials and foods amounts to tens of billions of Euros every year. This figure highlights the fact that the quality control strategies practiced to date are unequal to the problem. Compared to centuries past, contemporary challenges are therefore considerably more complicated and, due to the global material cycles now in place, include determining the commodity type (e.g. variety), identifying the exact geographical origin (e.g. to verify a product as a regionally-protected food) and distinguishing between specific types of production (ecological and sustainable vs. conventional agriculture).

The talk is going to give insights on state-of-the art approaches to experimentally cover the originality of food starting materials.

The evolution of vitamin B2 biosynthesis (Thursday, November 09, 2017)

Riboflavin (vitamin B2) is biosynthesized from GTP and ribulose 5-phosphate. Whereas the early reactions show significant taxonomic variation, the subsequent reaction steps are universal in all taxonomic kingdoms. All enzymes of the pathway have been characterized in some detail at the structural and mechanistic level. Some of the pathway enzymes have exceptionally complex structures and reaction mechanisms. The commercial production of the vitamin is now entirely based on highly productive fermentation processes mainly in Bacillus subtilis. Due to their absence in animals, the pathway enzymes are potential targets for the development of novel anti-infective drugs.

The talk is going to give an overview about recent advances in riboflavin biosynthesis.
